Did you know Einkorn wheat was one of the first plants to be domesticated and cultivated? The earliest clear evidence of the domestication of Einkorn dates from 10,600 to 9,900 years before present (8,650 BC to 7,950 BC) from two archaeological sites in southern Turkey. Remnants of Einkorn have been found with the iceman mummy.
The crop can be found in mountainous regions of Morocco, France, Turkey, and parts of the former Soviet Union. It survives and thrives on soils where most other forms of wheat do not flourish. Einkorn was among the first cereals that were cultivated, following its wide distribution around Transcaucasia, the Middle East, south-western Europe, the Balkans and the Mediterranean areas.
The wheat we eat today isn’t like what people ate thousands of years ago. In nutrition sampling tests, Einkorn has been found to be a “more nutritious” grain. Einkorn contains higher levels of protein, essential fatty acids, phosphorous, potassium, pyridoxine (B6), lutein and beta-carotene (lutein).
The Einkorn flour is characterized by high protein, high ash, a very high carotene content, and small flour particle size when compared to the modern bread wheats. There’s a reason people ate this stuff for thousands of years and called it the staff of life
Einkorn’s natural genetic code and low gluten levels make it a superior choice because of the compatibility with the human body when compared to the modern hybrid wheat of today. Einkorn grain is easier to digest, so nutrients are better absorbed.
