It’s summertime and the livin’ is easy! Summer days call for easy dinners that can be prepared on the grill without heating up the house. But chicken on the grill doesn’t have to be dry and boring like most grilled chicken is. The trick is in the marinade, and the big secret to mastering marinades is in knowing the effect of various marinating durations.
- Marinating for two hours or less will impart a surface flavor.
- For a fully infused flavor, marinate for 8-24 hours.
- NOTE: The thicker the meat, the longer it takes to absorb the flavor.
I’d love to share with you one of my family’s favorite chicken marinades—full of flavor and free of preservatives—perfect for chicken tacos that are good enough for company.
Juice of 2 limes
1⁄3 cup olive oil
1 clove garlic
1/2 cup lightly packed fresh cilantro leaves, chopped
1 teaspoon cumin
1⁄2 teaspoon chili powder
1⁄2 teaspoon red pepper flakes
1 teaspoon kosher salt
2 drops Young Living Black Pepper Vitality essential oil*
2 drops Young Living Lime Vitality essential oil*
Mix the above ingredients together in a glass bowl*. Allow chicken to marinate in the refrigerator for 2-6 hours.
*Remember to avoid plastic when using citrus essential oils.
