Mashed potatoes… there are so many ways to prepare them. Of course this recipe is a very classy one..Those of you who know me already a little bit, might know that I avoid ANY milk and wheat products. So publishing this recipe brings of course some alternatives with it.
Instead of butter I like to use coconut oil (unrefined in a glass jar) or Ghee.
For milk I substitute with coconut milk or cashew milk, mixed with a little cashew butter, which helps to thicken the whole mass. (I also used once an avocado, which helps to thicken, but destroys totally the colour of the delicious dish. A lot of stirring is important to get it fluffy.
I think, Mashed potatoes (try it with sweet potatoes, or mix it with cauliflower or other veggies, it is fun to experiment with it) you can eat ALWAYS. Different spices, different veggies or sauces and… good to go.
