If you like brownies… you’ll love this brownie cookie. We can’t quite call it “health food” (it IS a cookie after all) but it does have some BETTER ingredients AND it has Peppermint oil! It’s hard to beat the flavor combination of chocolate and peppermint.

I chose to use Young Living’s Einkorn flour because it’s an ancient grain that is easier for people to digest. Many who have wheat sensitivities do just fine with einkorn.

This recipe is low gluten (thanks to Einkorn wheat used), dairy free and nut free. I used Guittard chocolate chips because they are a gluten and nut free facility ( one of my son’s has a nut allergy).

Chewy Peppermint Brownie Cookies (adapted from allrecipes.com)

2/3 Cup coconut oil

1 1/2 cups pack light brown sugar (can use a little less)

2 eggs

1 tsp. vanilla

1 Tbs. water

1 1/2  cups Einkorn flour

1/3 cup raw cacao powder (or unsweetened coco powder)

1/4 tsp baking soda

1/2 tsp salt

2 cups semi sweet chocolate chips

7-10 drops Young Living Peppermint Vitality oil

Preheat over to 375

Beat coconut oil with brown sugar in electric mixer until smooth (well incorporated). Beat in one egg until completely incorporated. Beat in last egg and vanilla and water. Combine Einkorn flour, cacao powder, baking soda, salt in a small bowl. Stir the flour mixture into creamed mixture at low speed until just blended. Add 7-10 drops Peppermint oil. Fold in chocolate chips. Drop spoonfuls of dough 2 inches apart onto ungreased baking sheets.

Bake in preheated oven until cookies are set, 7-9 minutes. Cool 2 minutes on baking sheet. Transfer to wire racks to cool completely.

* I made a double batch of the cookies, the # drops of Peppermint was 12 drops and it tasted delicious.
