I love avocados, and love guacamole. Its the chips that get me!

Avocados have such great health benefits!

According to the USDA National Nutrient Database, one serving (one-fifth of an avocado, approximately 40 grams) contains 64 calories, almost 6 grams of fat, 3.4 grams of carbohydrate, less than a gram of sugar, almost 3 grams of fiber and almost 1 gram of protein.

Avocados are a great source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium and potassium. They also provide lutein, beta-carotene and omega-3 fatty acids. While they seem to be high in fat, please don’t overlook the number of health benefits from this ‘healthy’ fat that can help you absorb other nutrients from other foods.  They are loaded with fiber too!

We like to make tacos using different lettuce or cabbage as our taco shell and top them off with this amazing and clean guacamole.Guacamole

  • 2 avocados
  • 2 cloves of garlic
  • 1/4 of a red onion
  • pinch of salt (I like Pink Himalayan salt)
  • half a jalapeno (you can add more but I am a bit of a weenie when it comes to spicy food)
  • 3-4 drops of Lime Vitality Essential oil (you can use Lime juice, but I stopped buying citrus because I was tired of throwing it away because it was bad)
  • 1 drop of coriander essential oil or 2 tbs of coriander / cilantro

Add all the ingredients into a blender and pulse until mixed well.
