Vegan Wolfberry cookies

We are working on eating less fat and less animal product but those of you that know me, know I have a sweet tooth! I won’t write too much of an intro as you really want the recipe. Here you are!



Here is the recipe for Vegan Cookies:


  • 1 cup of Einkorn Flour
  • 1/4 cup of instant oats (I used steel cut)
  • 1/4 cup of Wolfberry Syrup. You could use Maple Syrup if you are looking to reduce sugar
  • 1/4 cup of almond (or peanut butter)
  • 1/3 cup of dried wolf berries
  • 1/4 cup of non dairy dark chocolate
  • 3 drops of Orange vitality essential oil
  • 1 tablespoon of flax seeds
  • 1 1/2 tablespoon of vanilla extract


  1. Preheat the oven to 350 Degrees
  2. Put the wolf berries in a 1/2 cup of water to hydrate
  3. Put all the ingredients in a bowl. Once the Wolfberries are hydrated, add them too.
  4. Mix everything together
  5. Prepare a cookie sheet with parchment paper. (then you don’t need oil)
  6. Spoon out into small dough balls and pat them down
  7. Bake for 12 – 15 mins
